Vegan chocolate chip cookies

Ingredients
  

  • 1/4 c. Vegan butter I like Melt, unsalted sticks
  • 1/4 c. Vegetable shortening I like Nutiva
  • 1 1/4 c. Light brown sugar
  • 2 t. Vanilla
  • 1/4 c. Plant milk
  • 1/4 c. Unsweetened applesauce
  • 1/2 t. Lemon juice
  • 2 1/3 c. All purpose flour
  • 1 t. Baking soda
  • 1/2 t. Salt
  • 1/4 t. Cinnamon
  • 2 c. Chocolate chips I like to do a mix of vegan milk chocolate and semi-sweet chips
  • Flaky sea salt (optional, for sprinkling on top)

Instructions
 

  • Pre-heat oven to 375 degrees.
  • Mix butter, shortening, brown sugar, and vanilla until well combined.
  • Add milk, applesauce, and lemon juice.
  • In a separate bowl, combine flour, baking soda, salt, and cinnamon. Then, add to wet ingredients, and mix until combined.
  • Fold in chocolate chips.
  • Scoop 3-tablespoon size mounds onto a parchment-lined cookie sheet and bake for 9-10 minutes.
  • After baking, sprinkle tops with sea salt (optional) and cool on baking sheet for 15 minutes before moving to cooling rack.
