Vegan chocolate chip cookies
Soft, puffy, and deliciously chocolate-y vegan chocolate chip cookies.
Ingredients
- 1/4 c. Vegan butter I like Melt, unsalted sticks
- 1/4 c. Vegetable shortening I like Nutiva
- 1 1/4 c. Light brown sugar
- 2 t. Vanilla
- 1/4 c. Plant milk
- 1/4 c. Unsweetened applesauce
- 1/2 t. Lemon juice
- 2 1/3 c. All purpose flour
- 1 t. Baking soda
- 1/2 t. Salt
- 1/4 t. Cinnamon
- 2 c. Chocolate chips I like to do a mix of vegan milk chocolate and semi-sweet chips
- Flaky sea salt (optional, for sprinkling on top)
Instructions
- Pre-heat oven to 375 degrees.
- Mix butter, shortening, brown sugar, and vanilla until well combined.
- Add milk, applesauce, and lemon juice.
- In a separate bowl, combine flour, baking soda, salt, and cinnamon. Then, add to wet ingredients, and mix until combined.
- Fold in chocolate chips.
- Scoop 3-tablespoon size mounds onto a parchment-lined cookie sheet and bake for 9-10 minutes.
- After baking, sprinkle tops with sea salt (optional) and cool on baking sheet for 15 minutes before moving to cooling rack.
